Wild Distillery sits quietly on the edge of Aakirkeby, right in the middle of Bornholm. It isn't a polished tourist attraction with queues and a gift shop — it's a genuine working distillery, where Master Distiller Henrik Nerst does most of it himself, from foraging juniper in the wild to distilling and bottling every batch by hand. A visit here is a distillery tour and tasting, not a museum stop — and that's exactly what makes it one of the most authentic Bornholm experiences you can have.

The experienceWhat a visit involves

In summer we run a Masterclass tour on set days each week. It starts with a proper walk-through of the distillery, where Henrik Nerst explains the craft behind gin, vodka and akvavit — from choosing the base spirit to the precise cut between heads, heart and tails. Afterwards, you'll taste your way through several of our gins, both neat and mixed into three different Gin & Tonics, while the stories about Bornholm and the distillery keep coming. Set aside around 90 minutes for the full experience. Dates and times are updated regularly, so once you're on Bornholm and planning your visit, the easiest way to see what's coming up — and sign up — is the tour page.

Outside the summer season we don't run official guided tours, but our shop and showroom stay open all year. You're always welcome to drop by, watch the production through the glass, ask questions, and taste our award-winning spirits — whether it's January or July.

Aakirkeby sits centrally on Bornholm — a short drive from Rønne (airport and ferry terminal), and an easy add-on to a day trip to Gudhjem and Hammershus in the north.

The storyRavnedalen, wild juniper, and Henrik Nerst

Wild Distillery began as an idea back in 2010, when Henrik Nerst — then a sommelier and the owner of a gourmet restaurant on Bornholm — visited copper-still maker Müller Brennereianlagen in Oberkirch, Germany. The idea took years to mature, and in December 2018 he bought his own distillery. The following year he launched the two series that still sit at the heart of the business: ENE and WILD.

What genuinely sets Wild Distillery apart is a special permit from the Danish Nature Agency to hand-pick wild juniper and sloe berries in Ravnedalen — a valley near Bornholm's northern tip, close to Hammershus. The combination of sun, salty Baltic wind, rocky coastline and sandy soil gives the juniper a crisper, more distinctive character than you'll find abroad. Weather varies from year to year, and so does the flavour — which makes WILD Botanicals Gin something close to a vintage gin, with only a couple hundred bottles produced each year. Everything from foraging the berries to polishing the final bottle is done by Henrik himself.
